10/11/2020 Olio Extravergine: Una spremuta di olive Dobbiamo pensare all’olio extravergine di oliva come ad un prodotto completamente naturale, ottenuto dalla spremitura delle olive e quindi paragonabile ad una spremuta di arance. Si certo, non è l’ideale a colazione con le fette biscottate, però il concetto è quello.

The typicality and territoriality of this prestigious extra virgin olive oil are certified by the PDO mark, obtainable only after verification of compliance with the production specification and, therefore, after oil certification. The quality of this product is manifested in the fruity notes that refer to the artichoke, the fresh olive and the grass. The complex delicacy and pleasant freshness make it particularly suitable for completing raw dishes. Produced in our mill with cold processing and stored in stainless steel silos under nitrogen at controlled temperature. It is available in numbered glass bottles.

The process include the washing of the olives, cleaning and dividing the olives by the right size. The fruits that are select are kept in drums with a brine solution until the bitterness is goine. The drums are kept under strict survailance until the olives are ripe, after this period the olives are delivered to the packaging room for the market.
